Personally, I've never seen a hunting rifle that had M1 sights mounted on it (assuming a non-Garand action for a hunting rifle).
The mounting base for the m1 sight was integral to the receiver. While it's not impossible, it would be difficult to install them on another rifle. The closest you can come would be to use a lyman or redfield rear peep sight on a hunting rifle.
The M1 front sight was mounted on a male-dovetail, so it might be possible to fabricate a mounting base.
