I went to a Korean restaurant with a coworker once. She claimed to be an expert on all things Korean because she took tae kwon do.

Anyway, she basically ordered for everyone. I remember they put out a lot of little dishes with different stuff, and there was a hibachi sort of thing on the table. This is the part I am curious about - she had us put the stuff on a piece of lettuce and roll it up, sort of like a taco. I thought I saw some of the Koreans in the place laughing as we did this. Were we eating 'authentically', or was she just out there like I suspected? I didn't see anyone else in the restaurant doing this... Always wondered about that little adventure.

Shows what I know, I thought you buried Kimchee in the yard until you were ready to eat it.

Nope, that was all on the up and up, it's a customary practice. Called a "Sang che sam" you roll up lettuce leaves and put in little bits of meat, rice and whatever. Just like a veggie taco, without the corn tortillas.
The Koreans that were laughing were probably high on "So-Ju" (rice wine drink). Koreans are the Irish of the Asian Culture. They like to get a snoot full from time to time! hic!

You got it right! it's a way to keep it cool without a refridgerator. Probably keeps the smell down too

You only bury kimchee in the wintertime. My parents have this wierd korean refrigerator thats suppose to simulate being frozen underground. Supposedly, it makes good kimchee.
