Captain Anderson's restaurant is a great meal, it's a bit pricey, but well worth it in my humble opinion. (ooh and you can also book a deep sea fishing trip there too. (one hell of a gig, they charge you to catch the fish then they charge you to eat it))
Theres a high power speedboat tour of the beach, though I can't remember the name of it. It seems touristy but it's a great way to kill an hour, and they let the kids take the con for a few minutes each. (we also saw dolphins about half the time)
There's a park out in the bay called Shell Island, I've only seen it from the boat but it'd make a nice stop.
the Hombre golf course is on north beach road, it's a championship course, and has hosted the US Open.
if you head a little further west on North Beach, you'll run into Eglin AFB. At one time (pre 9/11) they had a museum there with some decommissioned WWII-present fighters.
There's a little diner on front beach road called Mike's. The breakfast is good, and I used to eat there daily. I can't speak for the other meals, but they served a pretty decent omlette.
There's a human sized maze at one of the miniature golf courses, it's actually a lot of fun if you don't mind being seriously LOST (it's about 450'x450', and apparently is the largest permanent maze in the world), I'd seriously like to try this one on a cool evening after one too many beers.
Club Le Vela is on the beach, though it's a bit loud for my tastes.
Let me know if you need anything else

+1 for captain anderson's, great food but a bit expensive but a place you should go to. There are plenty of great restraunts along the main strip and the first couple streets behind and parallel to it.

Pineapple willy's and other restraunts along the beach all have great food.

If you have the time or money get down to the boat docks by captain anderson's about 5 am and get a boat to go deep sea or inshore fishing.

I went parasailing and it was fun, with a coupon from a a brochure it was $40 and it was 3 miles and it lasted quite a long time, longer than the 3 miles I was supposed to get.

I went to shell Island for the day and we went snorkling and saw dolphins but I didn't get close enough to touch them before they left. We found some conch shells and it was fun seeing all the brightly colored fish.

There's some kind of pirate ship cruise that's pretty fun for the kids. They sell booze for the adults too.

The kids are the biggest concern for me espically my son he is 3 and come Aug. we has to have surgery on both his legs which will put him in waist to ankle cast for 10-11 weeks so I want him to have fun before that has to happen

There's some cool wrecks down there if you scuba dive.

They just opened a Margaritaville Cafe on the West end of PCB. It's worth going to. There is also a Ripley's Believe It or Not Museum. Ripley's Believe It or Not!® Museum and 4D Moving Theater : Panama City Beach Florida
Haven't been there yet, but it looks fun.
Don't forget about Gulf World, with the dolphin shows and whatnot.
