You took the words out of my mouth!!!!! I like to get good and messy while eating ribs!!!!! Brisket on the other hand, I have had both ways, and liked dry and with sauce.

Steak should never ever ever have sauce or god forbid be soaked in BUTTER. That makes me ill just thinking of that!!!!! I think all a good steak needs is sea salt fresh cracked pepper and a couple drops of olive oil. Mmmmm making me hungry now!!!!!!

but I still like black beans in my chili!!!

I prefer to dry rub and mop the meat while it is cooking. And the mop I use most often is a combo of apple juice, vinegar, Jack Daniels, and spices. Tomato based sauces should never be used near a piece of BBQ.

Now note that what many of you think is BBQ is NOT. It's grilling. BBQ is slow cooking over low heat, preferably wood based heat, for long periods of time.

Damn ya'll making me hungry. Thanx for all the help think I'll get cracking on that asap. Here in SA we don't call it barbecue we call it braai, it's an Afrikaans word means the same though. We look for any reason to braai, any lodge, camp ground etc has braai facillities & with a braai we eat pap, that's made out of corn meal.Pap is also a staple throughout Africa. We don't only braai steak we braai anything chicken, lamb chops, chicken wings we even bake bread on the braai. So next time ya'll around these parts lets go shooting & have a braai.

So, since we got Chili and BBQ out of the way is it time to discuss the proper preparation and frying of Catfish?
