I think the dry rub is typically more of a Memphis style BBQ thing. If meat is done correctly, it doesnt need any sauce. Of course a person can always salt, pepper and some other spices, but meat should never be drowned in a sauce. That just covers up mistakes. Like steak sauce on a ruined steak.

I would agree with you on the steak, aboslutley no sauce, it's an insult to my cooking abilities if you disrepect the beef by putting sauce on it, but it depends on where you are going with the BBQ wether you want sauce or not.

When I think BBQ, I think brisket. Probably a Texas thing. If a brisket has been cooked correctly, several hours really slow no direct heat, then it shouldnt need any sauce. Ribs on the other hand do need something more than just cooking, but not much. I hate getting a slab of ribs that have been drowned in something. More often than not I don't like sauce on my pulled pork, depends on how dry it is. I will say that I do like to have chicken cooked on a grill WITH the sauce, but nothing after. I think this is getting away from Chili though. If a person wants beans in thier Chili, I don't care. It's just not something I would touch with a ten foot pole, thats all. All personal - regional preference I guess.

1 lb lean beef
1 lb breakfast sausage (NOT links)
6 tablespoons chili powder
1 tablespoon ground cumin
2 teaspoons paprika
1 large white onion, finely chopped
3 garlic clove
3/4 teaspoon Mexican oregano
1 teaspoon salt
1 1/2 teaspoons cayenne pepper
2 tablespoons masa harina flour or cornmeal
1 (8 ounce) can tomato sauce
16 ounces water
1/2 cup warm water


This is pretty close to what I would cook. I think the masa is essential to any Chili or it will be too runny, and thats never a good thing. I see way too many recipies with no reference to masa at all. I also like to use "chili meat" that we can get in the stores here that is ground really coarse with some gristle still there.
