Easy Meals (post yours?)

Ok, so this doesnt happen a lot but from time to time I have to fend for myself as far as cooking something for dinner goes. As I was thinking on what to get at the store since I didnt have but a few dollars, I picked up of this: http://shop.zatarains.com/zatarains®...mix-p-889.html?=

A sausage link that was already cooked and a small onion and BAM! Dinner for 2 days.

So I followed the cooking directions on the box and added some onion even though it didnt call for it, I like onions. And cut up the sausage and threw it in the pot and let it cook for half an hour and baked a thing of garlic bread that was already at the house and this was By far the cheapest and pretty damn good meal I've had, to be so easy to make. if you already have the other stuff, the rice is only like $5.. so yeah....

Also, if you dont have a girlfriend or wife to make you dinner and you pretty much suck in the kitchen (ive had my mom to teach me to half ass cook stuff since i was little) You can always get a crockpot and support your local farmers and go get some vegies and some beef and let it stew on low all day while you're at work and when you get home, dinner is ready.

Those are good but very high in salt and not healthy.

I have 3 serious hobbies: shooting, ham radio and cooking and not in that order.

Dudes of the world: throw off the yoke of oppression and Learn To Cook.

Warning: being a good cook is great for getting chicks but then they expect you to COOK every night and then they start asking for more and more exotic meals until you become the Kitchen Bitch!

Look anyone can make this and IT'S REALLY GOOD!

Buttermilk Oven Fried Chicken
Serves four adults

Prep: 20 minutes
Bake: 40 minutes
Stand: 4-5 hours

2 cups Low fat buttermilk
3 pounds Chicken parts, skinned
3 cups Cornflakes or equivalent
6 Tablespoons Toasted wheat germ with honey
2 teaspoons Sweet paprika
1-½ teaspoons Coarse salt
1 teaspoon Garlic powder
1 teaspoon Onion powder
¼ teaspoon Cayenne pepper

1)Combine buttermilk and chicken in a medium bowl. Stir to coat, seal with plastic wrap and refrigerate for at least four hours. Turn once or twice while marinating.

2)Preheat oven to 350º. Line a baking sheet with aluminum foil, spray lightly with PAM to prevent sticking or you’ll lose the bottom part of the breading.

3)Combine the Cornflakes, wheat germ, paprika, salt, garlic powder, onion powder and cayenne pepper in a food processor. Pulse until the Cornflakes are coarsely ground.

4)Transfer to a shallow dish or a Ziploc bag. Drain the chicken and roll each piece in the seasoned crumbs or shake it in the bag. Discard the used buttermilk: it has been soaking in raw chicken, it cannot be reused.

5)Place on prepared baking sheet; bake 40 minutes or until cooked through, depending on the size and type of chicken pieces used. This recipe is especially good with bone-in thighs.

Note: buttermilk freezes very well. It costs nearly the same price to buy a quart as a pint of buttermilk, so I buy a quart and freeze half in a Ziploc bag so it can get lost in the back of the freezer and be found five years later and thrown out.

This recipe easily doubles. So will your waistline if you eat it too often.

My personal favorite.. Soak boneless chicked breasts in butter milk for a couple of hours, coat in a 50/50 mixture of italian breadcrumbs and parmesean cheese.. Bake in over at 500 degrees for 12 minutes.. Idiot proof, and tastes great!

Yep, same kind of recipe, always good.

Now, for fun serve this with Ranch dressing and after they have eaten it say "I soak the raw chicken for 5 hours in buttermilk, then I use the buttermilk to make the ranch dressing".

People get really uptight at that point, big fun.

Boil and shread chicken breast, season with chicken taco seasoning. Plop a tortilla in a pan, add chicken add cheddar cheese. (add more things if you want) plop another tortilla on top.. Heat both sides and eat. Easy

You will have the chicken you boiled and seasoned up for a week. Think about the possibilities Tacos,chicken quasidias,burritos, mexican chicken salad.. All home cooked,cheap and easy to put together that takes less then 5 minutes (once you have the chicken breast boiled up).

Clam chowder is cheap and last awhile too..

I love one pot/pan meals. I'll have to try the Zatarain's on yours and Frenchy's recommendation. I usually make mine from scratch. Any good smoked sausage will work for Jambalaya but try some andouille next time. It kicks it up a notch.

Here's an easy meal for a single guy: Cube Steak. Saute 1 large sliced onion and green pepper in a little olive oil. Set aside. Brown up 2-4 cube steaks. Throw the onions, green pepper, and some sliced or canned mushrooms in with the cube steak and cover all with a can/jar of your favorite brown gravy. Put a lid on the pan and simmer on low for 30 mins until cube steak is tender. Serve with white rice or mashed potatoes. You can do the same thing with left over slices of beef or pork.
