I've been meaning to get back to home brewing. I need to pull all my stuff out of storage. I used to use a 5 gal keg to put my beer after the first fermentation process. I would then use a CO2 canister to carbonate the beer forgoing the second process and doing away with the dead yeast. Just store the the beer under 10 or 20 lbs of CO2 pressure for a week or 2 it'll carbonate without the dead yeast sedements.

i love living close to the yuenling brewery. i really enjoy going to the local small craft breweries and sampling all the different stuff.

I agree with the CO2. After a couple of batches I bought a Tap a Draft kit that uses CO2. I'd go ahead and add the corbonating sugar, but then put it under pressure. You can regulate the amount of carbonation by how much you shake the mini keg to dissolve the CO2 into the beer. And you have this cool mini keg in the fridge - you can draw off how much you want, no bottle to open! And no bottles to wash!!!

The only way to fly.

I've never liked beer. The only beer I liked is up here in Alaska at the Mooses Tooth. They make their beer here in Alaska. Hard Apple Ale. That is the best beer, in my opinion.

Yeah, the first thing that comes to mind is the priming sugar, since I carb'ed in the bottle. But, I dissolved it in 2 cups of boiling water, and added it to the brew before bottling and stirred it, carefully, so I didnt introduce air (oxidation is bad!). I only bottled it about 3 weeks ago, so Im thinking a little more aging and it would be right. I had about an inch of headspace at the top, which is about right too.
