The lack of lacing and carbonation could be a water issue? Hard to say.

I just drank the last of a rauchbier I made last year. Without question my best effort to date. I'll have to check my notes after I get moved into the new place, but I remember smoking a large amount of crystal and chocolate, #3 maybe?

The honey porter that followed was a diaster by comparison. Too much malt and honey. The freakin beer is more along the lines of Barley wine... A little to much alcohol bite for my tastes!

Haven't brewed beer since my graduate student days ... mmm the memories or is it lack of memories ... j/k. Love IPAs, hops city! Always suprised me that it was so easy to make a better beverage than commercially available with a little time. Which reminds me why along with cost i want to get into reloading too.

I'd like to get into homebrewing as well...
But until then I just wish Rogue Ales would brew up a little more 'Charlie.' It's one they only do every few years. Light Amber in color with a bold, but not overpowering hoppy flavor.

i was thinking about your carbonation issue...do you measure out your priming sugar? how much do you use? do you keep an eye on the temperature of your fermenting beer? it is my understanding that, for homebrews anyway, carbonation comes from a final fermenting in the bottle with the priming sugar and the small amount of yeasties left in the beer. not enough sugar would create flat beer (conversly, too much would create a fizzy or overpressured beer). a drastic change in temperature, or temperature outside what the yeast can survive, could also make for flat beer. also, underfilling the bottles could create a flatter beer, just like overfilling could make one explode...just like loading ammo i guess...you should have about one inch of neckspace once you remove the bottling wand...however, i know what i know from helping an old guy brew (he can't lift anything, so i'm the muscle). but i just started reading the hombrewing bible

Mmmmmm....Beeeeeeerrrrrrr!

I've made about 6 batches of homebrew all total, but it's been a few years. I make a hoppy pale ale, like Full Sail or Sierra Nevada.

Dang, I just might get inspired to go get my stuff out and whip up a batch...

i am a big fan of virtually every sam adams beer, every Leinenkugel (http://www.leinie.com/ ) , and kalamazoo michigans own bells. Try the oberon and the bells double cream stout. Double cream stout is my favorite beer. http://www.bellsbeer.com/

home brewing is something i'll get into one of these days. i love beer though. only found a few that i don't care for - usually the cheapy american brews that lack flavor.
