I add Tony Chachere to cajun, mexican, and seafood until there is enough salt, then adjust heat with Sriracha. For Asian food, substitue soy sauce for the salt source but keep the Sriracha for heat.
Pretty much anything I cook, if the dish is "pretty close", it usually just needs a little squirt of Sriracha and it is done. It is not anywhere near the hottest sauce around, but the flavor is wonderful. It wakes up the lazy taste buds, if you will.

Louisiana hot sauce. Not style but the brand. Also I don't do pickled jalapeno either. Fresh and green. Anaheim peppers and sometimes habinero . As with breakfast lunch and dinner. Hell I take them to restaurants.

I use Tapatio more than any other hot sauce. It's great on many foods, especially Mexican. You can feel the heat, but it's not too hot. It also has a great flavor.
I use Sriracha on Chinese and Thai dishes and some other things.
For pizza I like to mix a little Tapatio, Sriracha, and garlic Tabasco.

I love a lot of different hot sauces. This is probably my favorite although it's probably not considered a "sauce" I use it that way. (same people that make Sriracha...)

Big fan of Sriracha. Put it on just about anything appropriate for hot sauce. I've used the Sambal here and there as well. If I feel like a change, Blair's Original Death Sauce is pretty good too. Nice smoked chipotle flavor.

I roll my own in the summer:
8 habaneros
1/4 cup chopped onion
1/4 teaspoon chopped garlic
1/4 cup vinegar
salt
1 can peaches drain syrup
Food processor/ blender everything
starts sweet and tangy, then the habanero fire!
