It tastes like chicken, and can be used in place of chicken in just about any recipe. It's darker than chicken (think dark turkey meat) and a bit chewier, but the taste is pretty much the same.
They're a pain to process, so if you don't bag at least five or six of them, you're wasting your time. Squirrel hunting is a lot of fun, though, and is one of the easiest game animals to go after if you're introducing a new young hunter to the sport. -James |

So, ya shoot 'em, skin 'em and then take them to the butcher? What should you have them processed into?

I don't think I've ever heard of someone taking a squirrel to a butcher. The meat is in rather small pieces, so you can cut it up yourself - no problem.
I usually cube the meat into 3/4" squares, although I'm sure you can get creative with it if you're so inclined. -James |

Heh, don't mind me....
So most of the meat is in the back straps and legs? Is it greasy or dry? Stringy? Or is it just like chicken?
