Actually the number you are looking for is a low Standard Deviation which is basically and average of the difference in speed from one shot to the next. The Extreme Spread will tell you the highest difference in FPS within the test group from highest to lowest but not the difference from shot to shot. With the average speed of the bullets tested and the Standard Deviation you can calculate the range that all of the bullet will fall into. You can't do that with Extreme Spread. However if all you have is ES a low ES is better than a high one.
