When I hitchhiked through Turkey in 1974 I had a sleeping bag and a backpack..I do remember the youth hostel in Istanbul however..I ate something and got good and sick..It was very comforting to be able to sit on a toilet and puke in the sink at the same time..

your list looks good, My Family and I toured Europe last year France, Spain, Italy and I carried most of the item on your list.
A few items I might suggest:
A packtowel, MSR make a nice one that is easily carried, dries quickly and can be used for a variety of things.
A couple of carabiners for just in case to use with that paracord, used mine a couple of times to hang things in the Hotels we stayed.

Looks good. You can pack some of your smaller items inside your Nalgene bottle to save some space. That's a lot of empty space.
From my brother's experience living in Africa with the PeaceCorp, grab bottled water whenever you can(I know you have the tablets for emergencies, but don't waste them if you can help it). I can't speak for Turkey, but in Rwanda clean water is a very important commodity.

I'm just always looking for new and interesting places to go. Right now everyone is saying that Istanbul is the new Paris, Turkey has really come into its own.
After Europe gave it the snub and wouldn't let it join the EU because of all those darn Muslims (in their opinion) Turkey said "Screw you west, we have been the home of more great empires than you since the dawn of time we'll just capitalize on that!".
It's cheaper than Europe right now too and I still get to visit a number of very well preserved Roman sites for example that you might think you have to go to Italy for normally.
Any way should be fun. We'll probably hit up Germany for a 5 day trip for Oktoberfest this fall with some friends and then I'm not sure where next.
My buddies and I have agreed to climb Mt. Kilimanjaro in the next 3 years but my wife won't want to come.
My 10 year plan is to get to Antarctica, it's the only continent I have not stood on.

I have been to Istanbul.
You will have an awesome time! You will have to go the the Grand Bazaar (Kapalıçarşı). The hot regular and apple tea that they serve there by the shop owners is really good. I hope you are good at haggling.
I would recommend a small Turkish phrase book with essential phrases highlighted.
i.e. HELP! POLICE! I'm Canadian! JK!
Have a fun trip! Do you have a site for your photos? Would love to see some of your travel shots.

I would make sure you call the bank(s) and tell them you are going, so they don't decline your card(s). They usually tell you the exchange rate, so if you call 2 different banks, pick the card with the lowest exchange.
I just got back from Paris, and found out my cell phone didnt work there (an iPhone 4s can, regular one doesn't). I saw some tourists using those 2-way radios. I thought that was pretty cleaver.
