I started off carrying with one in the chamber. I'm a skinny dude with no ass, so I never really worried about shooting myself.

Haven't yet. I feel comfortable enough, but I haven't left the house with the gun on (no CCW in WI) so I haven't had the chance. Once I do the Armed Guard training, I'll be carrying all the time with a round ready to go.

I have heard that most "gun fights" start at about arms length so pulling racking then firing your dead or dying. Therefore, one in the chamber a full mag and at least one extra mag normaly two, just in case (if it jams i will drop the mag rather than try to clear it for the same reason not too mention that clears most jams).

I would never drop the mag as the first response to a malfunction. The Tap Rack Bang drill will clear most everything and is quicker than a mag change, plus you don't drop ammo that could be needed to save your life later in the fight.
