I ve bought a few pawn shop guns. They do have a good selection sometimes. But I mostly look for military long guns. I missed out on a M1 Garand for $450 once. Bummed on that to this day.

Only if this is a local requirement as NICS does not require any info on the firearm itself.

When I worked at a Pawn shop in Kansas more than a few years ago... anything that came in with a serial number was listed on a sheet and supplied to the local PD on a weekly basis. If anything came back as reported stolen, the item was picked up by the PD for return to the owner and the ID of the seller/pawn customer was taken and followed up. As mentioned, if the victim never reports the serial number as stolen to the PD, it's very likely it will never come up as being stolen thus doubtful it will ever be recovered.
