all barrels are just set up for one magazine tube length, so depending on your tube there are only certain barrels you can get, you can't extend the barrel like you can on a remington FYI.

But remington has ceased production of shotguns that utilize only a pistol grip.
So, unless you can find one stuck back in a corner somewhere that has a half inch of dust on the box, you'll get a mossberg or pay a premium for it.

cant you just put a pistol grip on it and it will be okay if the barrel is 18.5 or more?

No, then it would still be considered a shoulder fired weapon.
An AOW (any other weapon) can never have a buttstock installed on it. If one were to install a buttstock, it would be a shoulder fired weapon. The whole point of AOW is to not have that. edit to add: if you ever would want to install a buttstock, just SBS it. (short barrel shotgun). You can install longer barrels onto them if you'd like, but it doesn't work that way with AOW's.

I am talking about a normal mossberg that already has a buttstock. Just a plain jane 500. Can you put a pistol grip on it?

As long as you have a minimum 18" barrel on it, yes, you can just put a pistol grip on a standard Mossberg 500 with no problems.
If I may ask--why do you want it with just a PG?
