How do I find out the born on date for my SA 1911 Mil-Spec?

If it's new, there is an ammo casing with a signed folder. If it's not new, contact Springfield.

Also, if it's NIB I think mine came with the manufacture date stickered onto the box.

I got it a couple years ago LNIB from a real estate agent, cart is long gone.
