No, the holsters for the 9mm service will NOT properly hold a 9mm sub-compact. The sub-compact has the same barrel-width as the .40's and .45's...the 9mm service is skinnier. It will fit, technically, but you'll be racking the slide on the SC trying to squeeze it into the holster made for the service.
As for uncle mike's IWB...I had one. Until I tried to draw with it, I thought it was the greatest thing ever. I ended up drawing my SC and pointing the barrel still inside the holster at the target. Those things are trash. Although I will say after getting a C-TAC for the service, I picked one up for the SC as well...high quality, absolutely love it.

Comp-Tac lists the 9mm 4" and the 9mm 3" differently for the MTAC, although with the half kydex, half leather, I'd say that it'd probably give you a better fit than the CTAC. I'd say if you have to only order one then order the 4" version. A little tight is probably better than a little loose.
I didn't realize that MTAC was half leather...obviously leather is a bit more "workable" than kydex.

You should not have a problem with the MTAC "slide" model and the leather will loosen up a bit. Go for it.

I'm just not sure about a very hard/ridged holster body....Even with backing it has zero give..... Its a good looking holster though appears to be very good quality.

Kydex holsters have been around a long time so they're hardly a fad. Folks seem to like them.
