Takeup is the distance the trigger must travel before it "breaks" and releases the striker to fire the weapon. This is how far you must pull the trigger back on the first shot.
Reset refers the distance the trigger must return foward before the weapon can be fired again once it has been depressed. Once you fire the first this is how far you must allow the trigger to return before making a second.

Excellent, thank you very much! This has probably been asked a million times but I'll make it a million and one... is there a preferred weight for carry guns? Like, a "rule of thumb" weight, or is it all personal preference?

Lots of people will say 4 pounds. Talk to the smiths - they'll give you advice. Tell them what state you live in, how much experience you have, etc..
