I compared each side by side at my local store. The 2000SK (used) was going for $100+ more than the XD9SC (new). Both felt very good in my hand. The 2000SK trigger was so smooth that the seller thought it had a trigger job, but didn't know.
At the high level, the only difference (if I recall correctly) was the lack of a safety on the 2000SK. Though they seemed similar in size and weight, the SK seemed slightly less blocky (or is it Glocky?) than the 9SC, perhaps 1/16th - 1/8th inch or so less width. It is a bit easier to find a 9SC to try at a range, which is what I did. Shot wonderful and I bought one (last weekend). I suspect the HK would shoot just as well, but in the end the H&K wasn't worth the extra $ to me. The only down side, if there is one, would be that the 9SC seems more than a bit of a challenge to carry IWB. I can't see it happening for me. As I posted elsewhere, the XD9SC IWB with a Desantis looked like I had either a colostomy bag or a pistol under my shirt. If they both fit your hand well, I can't imagine making a wrong decision by purchasing either. Hope this helps.
