from what i have read, and i dont know what you know, but this is pretty much an acidification of carbon steel, not stainless, so that it builds up a protective barrier. It can be done as simply using a knife to cut fruit and not cleaning it. Eventually it will discolor and not have the "metallic" taste on your food. To "force" a patina simply do this on purpose. there are some videos on youtube of using mustard and simply leaving it on for a couple hours, and then cleaning off. I believe what this guy did was put grapefuit juice and water probably in a pressure cooker and let it do its thing. He said he used a dremel of sorts to get factory finish off, as most all knives are sold with a protective coating. hope this helps and here are a couple links.

My latest acquisition -- a Benchmade 950 Rift:
I wasn't content with the all-black scales that came on it originally, so I traded someone for the gray/black 2-tone scales and dunked them in a Rit dye bath for 90 minutes to come up with the denim blue/black color.
