So I have one of these: http://www.hsgear.biz/ProductInfo~pr...~85-PGP01.html but it doesn't stay in the grip very well at all. In fact, I'll be shooting and go to check my targets only to come back and find a set of batteries on the ground that look remarkably like the very ones I keep in the grip!

So any thoughts on how to make my plug stay put or are there better plugs out there that I haven't found yet. By the way I have a Hogue grip on my AR.

Buy a Magpul MIAD grip

The MagPul solution is pretty versatile. CAA has a similar solution at about the same price give or take a few bucks depending on the vendor. I've got a MIAD and eh.. can't say as I'm so impressed that I'm going to swap out all of the grips on my AR's for one. But what the hell, it will serve the need you specified.

Another for the MIAD, it also has interchangeable backstraps!

OK, if I went the Magpul MIAD route would I need to buy one of the battery cores for storage or is the "basic" setup going to work in terms of battery storage?

I lied, the CAA grip doesn't have the compartment.

The MIAD from Magpul comes with a three round holder. I had to get the AA battery holder from MidwayUSA. Here Is a few links to help.
