Sure, if you stay within the cartridge's (and rifle's) limitations. 7.62x39 is a pretty close match, ballistically, to .30-30; traditionally, that's about a 150-200 yard round. I'd recommend getting some of the 150gr soft points...I have a couple friends who use them in SKS's to good effect.
Then, I'd figure out at what range you can always hit a 4" target, first shot, every shot using that ammo; and call that your max range. Just be mindful that some states have both cartridge limitation (shouldn't be an issue, but check) and magazine capacity restrictions (buy a dedicated 5 or 10rd magazine, if your state doesn't allow high-capacity; just putting 5 rounds (for example) in a 30 round mag will get you in hot water).

I don't think they allow the FMJs for hunting, but nothingness is correct, the softpoints can be had and are easy to find. Also, I believe you must limit your mag capacity to 5 rounds for hunting.

keep the range under 200m and you'll do well. I highly recommend finding some 5-10rd mags, 20s work decent. 30 and 40rd mags get heavy after a while and throw off the balance even more on an already muzzle heavy weapon. I've hunted with them a lot.
