As far as NATO/Warsaw, I'm 5' 11" and I like the shorter stock. I shoot my AR-15 one notch out from shortest and I like the AK the same way. My HD shotgun has a youth stock on it as well. I think to be able to move and shoot, it's most efficient to do so as you normally would, instead of bladed to the target. That means I need to be able to shoot and move square to the target.
